Chocolate- Espresso Cookie Sandwich The chocolate almond cookies in this vegan ice cream sandwich are made with spelt flour, which is gluten- friendly; they are sweetened with maple syrup and agave syrup rather than white sugar. Layered with vegan Ice cream, this is a delicious and indulgent desert. For the cookies Ingredients. 375ml whole spelt flour ¾ cup white spelt flour 1tsp baking powder 1tsp baking soda ½ teaspoon of salt ¼ teaspoon of cream of tartar ¼ cup of cocoa powder ½ cup canola oil ½ cup maple syrup ¼ cup of agave syrup 1 tsp apple cider vinegar 1tsp vanilla extract 1tsp of almond extract 2tsp espresso powder 1cup of vegan dark chocolate chips of chunks ½ cup almonds coarsely chopped. In a mixing bowl combine the flours, baking soda, baking powder, cream of tartar cocoa and espresso powder. In a separate bowl mix the oil, syrup, vinegar and almond extract, whisk until combined. Mix into the dry ingredients and stir them together. Add the almonds and chocolate chips. Drop small spoonfuls onto a lined baking sheet. Bake at 175 degrees Celsius for 12 minutes. To serve layer with your favourite dairy free ice cream.and garnish with grated dark chocolate or a few crushed cacao nibs.

We have this gluten free version of pancakes on our menu. Sweet potatoes are one of the best sources of carbohydrates for the cyclists. They are high in carbohydrates, but have a relatively low glycemic index which means a slower burn. They are also an excellent source of vitamin A and C, magnesium, potassium, and beta-carotene. Pecan and Apple stacks (Cooking these pancakes in coconut oil gives a slightly tropical taste.) 1 large sweet Potato roasted in its skin until mashed 2 banana's mashed (these replace the eggs and bind the mix) 2tsp wheat free- baking powder 2 cups of almond/soya/ or milk replacement 400 gr doves farm gluten free flour 1-2 tbs of coconut oil 1 tsp cinnamon 1 tsp vanilla essence Remove the skin from the sweet potato and bananas and mash together . Add the flour, baking powder / cinnamon and vanilla essence Mix in the milk replacement of your choice and stir to make a fairly thick batter Leave to rest for for ten minutes then melt the coconut oil in a pan and drop spoonfuls of mix into the pan to make pancake. cook a few minutes on each side . Layer with baked apples,sliced banana and pecans and drizzle with maple syrup or vegan salted caramel. in honour of pancake day we will also be selling Canadian style blue angels with blueberry and bananas. Don't worry if you cant make it in for pancake day. Both styles of pancakes will be on the menu until Sunday.

Banana Bread Pancakes with Vegan Salted Caramel Sauce (Giving up The Dairy, and the wheat) 175 gr doves farm wheat free flour/ 3 tbs ground almond /1 1/2 tsp cinnamon 1 tsp mixed spice/1/2 tsp nutmeg/3 mashed bananas/ 100ml water or milk substitute Mix the first five dry ingredients in a bowl. In a second bowl mash the bananas. Mix into the dry ingredients add the water and the vinegar and let sit for five minutes. Coat a non stick pan with a little oil or coconut oil. Add 3 pancakes and slice a few bananas into each one. The most shocking thing about them is how simple they are to make and how good they taste. Mash 1 banana with two free range eggs and mix it up. Imagine you are making scrambled eggs with banana. I like to add a small cap of vanilla into the mix. The mixture will be quite thin. Melt a little coconut oil in to a pan add a small ladle of the mix and cook gently for a couple of minutes on each side. Serve with a squeeze of orange or lemon and coconut sugar.
This summer it feels like I have been feeding the five hundred,Raven my fifteen year old has been home for eight weeks along with a menagerie of her friend's It's been quite shocking how fast a few teenagers can empty a fridge. Luckily I was sent £10.00 in vouchers to spend in the 99p shop and a challenge to spend it creatively and blog about it. On my first trip I bought a pack of O2 cookies, twenty mini flower pots and a tin of coconut milk. I started by making the Oreo cookie soil a rather naughty treat. All you have to do is split the cookies apart with a knife, scrape out the centre and then blend the cookies in a food processor. If you don't have a food processor, you can put them in a plastic bag and crush them with a rolling pin. I blended the coconut milk with banana's. Since it was an experiment I added a tsp of vanilla and some frozen blueberries to half the mix. To the other half I added rosewater and blueberries. I put them in the freezer for a couple of hours and then carefully removed them from the pot,then I rolled half of them in the O2 soil and left the other half plain. I wanted some of them to be a healthier option. A couple of hours later they were perfect ! 1 pack of Oreo cookies makes a big jar of soil it's also perfect on French Toast, Pancakes,or in Smoothies On my second visit to the 99p shop I bought some nut-city chocolate spread. A loaf of white bread,A pack of grow your own beets with mini-propagator, a blue enamel-camping bowl, a pack of Alpen breakfast bars a tin of chestnuts and some Opi nail polish. Plenty more 99p adventures to come
